It’s fun to use fresh or frozen fruit, control the sweetness level to your taste, choose your own flavour combinations, and maybe even add carbonation. You can invent your own recipe. Or use one of our “tried and true” recipes.

Whatever you choose, you always have the help of our expert team to ensure your finished wine is a complete success.

Popular fruit wines include blackberry, blueberry, raspberry, strawberry, loganberry, peach, plum, apple, cherry, and rhubarb.To name a few!

Using green grapes, we make white wines and all sorts of flavoured wines. The three most popular fruits are blackberry, plum and grapes, simply because they are so plentiful in the Comox Valley. We also make fruit wines from fruits bought at farmers’ markets or the supermarket—pineapple and kiwi are two of the more tropical popular choices.

The same winemaking techniques that are used for red and white wines are used for fruit wines. There are almost no limits to the possibilities when you think of combining fruits or adding carbonation.

For example, with carbonation, rhubarb makes a delightful sparkling wine, sure to impress your guests for a special occasion or a Saturday on the patio!

We start with your fresh or frozen fruit. Depending on the recipe, we add sugar, and yeast, balance the acids, and ferment the batch on the fruit for up to a week in a primary fermentation vessel. The fruit is then separated from the juice, often through pressing the fruit. We then transfer the wine into a carboy for secondary fermentation

The amount of fruit needed varies, depending on the style of wine and the type of fruit. Blends are also very popular.

The Advantages of Using Frozen Fruit

Freezing fruit breaks down the fibre that holds the fruit together. When the fruit is thawed, the colour and flavours are released more quickly.

By freezing fruit as it ripens, you can accumulate enough fruit over time to ultimately make a batch of wine. When you freeze enough for multiple batches, you can then make your fruit wine throughout the winter.

Tips for Freezing Fruit for Wine

It’s not necessary to freeze your fruit, but it is convenient.

  • Chop up large fruit, but keep berries whole.
  • Wash and dry the fruit.
  • If your fruit will be frozen for more than six months, consider packing it in a sugar syrup. Cover the fruit in the syrup to help prevent freezer burn. Use less sugar than your wine recipe will call for, so that more sugar can be added in the making of the wine.
